"Best of best" is very relative criterion! Best headphones are different for different people. You have to try them and YOU have to decide which are best for you!
Anything Bluetooth will not work. Too much inherent lag.

There is a contradiction here because you said best of the best and then mention xvive which is pretty cheap.
So these are the options as I see it:
1) If you go IEM, its in the headphones not the wireless unit. Decent IEM's start at around £300 I would suggest. Shure, Westone etc all do non custom fit. for Custom fit, then expect to pay £500 upwards.
2) Over the ear headphones will give a better sound as they have bigger drivers etc. Most wireless are bluetooth which means you have lag, so it depends what you are doing with them. I have some sony wireless which are UHF I think but they have a volume limit and bug out sometimes when i use them
All the typical units for listening to TV/hifi that I have seen are bluetooth and have terrible latency. Not OK for guitar playing or recording. It would be pretty handy if builders of quality audio interfaces - eg RME built units which included radio outputs with low latency. With transmitters and receivers available you could just connect your favourite cans and get busy.
Not sure of the context here but particularly if this is for live use, the Shure PSM-300 system I use is analogue wireless and therefore very low latency. The P3RA beltpack is nice and has a built-in limiter and EQ if needed. It's the first rung of the ladder for their stereo systems. Pair with some 215 or better IEMs and you have a good solution.
None of this sounds as good as some Beyer Dynamic DT 770s connected direct though when at home.
OPTION 1:
Get Sony or Headrush UHF/RF wireless headphones.
No noticeable lag, Hi-Fi quality, stereo.
Around $100.
OPTION 2:
Get radio transmitter (UHF). connect your favourite headphones to battery operated radio.
Dial in the frequency on the radio. Instead of radio you can use an Android phone with radio app on.

You´ll need an analog system, otherwise you´ll get unusable latency.
I use an old Sennheiser using an anaolg RF connection.
Pretty good at home. For live not good enough, cause its too much compressing at higher levels.
Good specs on these RF Headphones but any pair you get is going to feel like you are wearing a tank on your head. I know. I use Logitech wireless for gaming. After an hour, your head tilts down.

Headrush HRF 801- in my house they get some interference, but tolerable

why not an Xvive and use your favorite over the ear cans (most now have 3.5mm connectors and adapters for 1/4")? Our drummer plugs his OTE cans into his receiver of our NADY PEM-04 and it's perfectly fine.
