1 kabinet is pretty good. I bought 2 and sold 1 because I didn't need it because it sounded great with 1, although I was running mono, you will have the option to run Stereo which would be quite a difference.
So I would suggest get 1 first and then see...

I don't. I used a 1x12 open back cab cabinet recently to play on a big stage in front of 7,000 people, No IEMs, just the cabinet on stage. Others had some of me in their monitors. I could hear it just fine all over the stage, I was only using about 25 watts
